In our first post of this series, we mentioned some good home-cooked soups that you can treat your heart and family to, while battling the winter chill in the air.
Today we have some more heart and soul warming soups that are easy to make as they are quick to taste.
Note – These recipes are tailored to suit desi palettes.
Creamy Pureed Green Peas Soup
This soup is a favorite with kids due to its rich, creamy consistency and subtle flavor. Serve with a zesty salad or bread of your choice!
Category : Vegetarian
Flavor – Creamy , herby
Frozen green peas ( around a cupful per serving )
Oil (olive oil preferred)
4 tbsps of fresh cream
Turmeric and garam masala
Dried oregano and basil leaves to garnish
Grind your peas along with a little water in the grinder.
Heat a little oil in a pan and add some ginger paste and garlic paste and fry it, taking care not to let them burn. Add the peas to this mixture and let it cook for awhile till the peas have lost their rawness.
Make sure the mix is stirred often so that it doesn’t stick to the pan or is burnt.
In a separate pan , heat oil and fry the cumin seeds with a little turmeric, garam masala and salt. Add some water and wait for it to come to a boil.
Once it starts boiling, add the peas and cream to this and let it simmer for a while till the pea mixture is completely cooked.
Garnish with oregano and basil and a dollop of butter if you’re feeling generous.
Serve warm and watch the smiles grow wide 🙂
Spicy Lamb Soup With Broccoli
Soups are often the best way to chase a cold away. What better way to say goodbye to that cold than this spicy lamb soup – healthy enough for dinner and tasty enough to make your kids eat broccoli
Category – Non-vegetarian
Flavor – Meaty / Spicy
Boiled lamb cubes or chunks cut roughly into smaller bits
Garam masala (whole cloves and cinnamon)
Whole and ground pepper
Heat a little oil in a pan and add the whole spices to it to let the spices flavor the oil. Add chopped onions. Add the meat bits and season with a little salt and whole pepper till the meat just about sears through.
Now add coriander leaves and give it a mix. Add the broccoli and saute for about a minute. Add the meat stock and bring to a boil.
Let it simmer for a while and serve with crushed pepper and Indian bread or Kebabs, perfect for a cold.
We hope these soups warm you up ! Enjoy 🙂
