This salad is light and fruity salad with a slight kick perfect for summer. My sister-in-law made this a few weeks ago and it was a hit. And it’s easy to make!
1) Cook 2 lightly salted skinless chicken breast halves and dices them up. You can cook the chicken on a pan or bake it in the oven.
2) In a large bowl, combine the chicken with half a stalk of celery (diced), half of an apple (green or red, diced), half of a large cucumber (diced), 1/3 cup raisins, 1/3 cup of pecans (whole or diced), 1/3 cup grapes (halved), ½ cup of light mayonnaise, ½ tsp curry powder, and salt and pepper to taste.
3) Mix it all up and serve!
Feel free to experiment with the types of fruits and veggies. You can eat the salad alone, on toasted bread, or on whole wheat crackers. Of course, being the carbaholic that I am, I liked it best as a sandwich. If you are particularly carb conscious, you can scoop the salad into lettuce and make lettuce wraps. With all the time you save making this dish, you’ll have time to make a fresh lemonade or brew an iced tea. Ahh, summer!
